Custom dials on Canon Cameras

I have never bothered with the C1, C2, or C3 dials on Canon DSLRs before, but today I was trying to set one up on my Canon 7DII. I just wanted back button focus and a different AF setting for birds in flight. As soon as I left the C1 option on the dial and went back to AV and then returned to C1, the items I had changed on C1 were changed back to the original. Is there any way to make those settings permanent? TIA
