Kind of awful trying to manual focus a 35mm as a portrait lens on a dSLR, though!

Not at all, the in-focus indicator in the viewfinder still works with these lenses.

In-focus, does that include a sharp eye?

Not sure I understand the question - if the selected focus point is on the eye and the in-focus light comes on then yes - no different than if you are using an AF lens.
