Would the new MacBook Air M2 work ok with photoshop and Lightroom?
Configuration:
Apple M2 chip with 8-core CPU, 10-core GPU, 16-core Neural Engine
24GB unified memory
1 or 2TB SSD storage

Not the best tech person so hopefully someone here can help

I would guess that the answer is yes, although 24GB of unified memory is probably a bit on the low side. I am using a MacBook Pro with the M1 Max and 64GB of memory which is super. The M2 looks like an improvement over the M1 (not an M1 Pro or Max) so it should be a good computer, but not a speed demon.

Not particularly relevant to your question, however, I have an M1 MBP with 8Gb Ram, and 512Gb storage and it is faster rendering Nikon Z9 files than my late 2019 16" MBP, 2.3 GHz, i9, with a higher-end graphics card. I find it a bit annoying that a machine under speced beats my high-end laptop(granted it is a couple of years old, but still). As long as I don't have a pile of apps open that is, because the M1 machine has a paltry 8GB of Ram.

Yes it will work just fine and have good performance, not as good as an M1 MacBook Pro with more memory but then I suspect you already knew that ;).  You will likely be very happy with it from a portability/performance ratio standpoint.
