Is it normal for the dynamic range to be that much lower when shooting using an electronic rather than a mechanical shutter at lower ISOs? The photonstophotos site indicates this is the case for the R5 though does not publish electronic shutter readings for most other cameras.
It depends on the camera, it likely means that they are dropping down to 12 bits instead of 14 bits.  Older Sony models a similar thing when going to AF-C or auto-bracketing.  Canon is still pretty new to the high performance, high megapixel mirrorless game...

Based on the data you mentioned, I would go toe EFC instead of full ES.

Looks like the R5 does use a timer versus a temperature sensor.
