i think a lot of lenses that have a VR / OS (Stabilization) feature nowadays have a 3 way Slider. OFF - NORMAL - PANNING.

Typically Normal would be hand held on a perched bird for instance. For flying birds should I be using the Panning selection when handheld or is this for panning on a tripod?

The 2 lenses in particular I use are the Sigma 150-600 Sport and the Sony 100-400 GM. 

What do you think?

Use the panning option or turn it off altogether. In most situations your shutter speed for birds in flight is very high and having it on doesn't buy you much.
