Without a tripod, I will use Shutter priority to get some sharpness.
The dof will be shallow, giving some nice formless background, but its necc to at least get some details sharp in the subject.
Overall, this approach seems to work for most floral closeup.

60D, 100mm Canon macro, SP, 1/125, f3.5, no crop.
