Looks like Bridge 2021 introduced a serious CPU hogging process that runs your CPU flat out.  Here's how to fix it:

Adobe must have fixed it because my Bridge (newest version that I downloaded only a couple of weeks ago when I went on the subscription plan) doesn't cause the CPU to run hard at all.  Checked it after viewing the link and it initially ran @ 15-18% at start-up and quickly wound down to 1-3%.  I checked the setting and changed it to "Embedded" anyway, just to be on the safe side.  I assume that was ok.

Changing that setting means it is using the embedded jpeg for previews rather than generating a high quality version. It should stop it (the CPU hogging) after it has finished generating all the previews, if it doesn't that would have to be a bug? This thread seems to be about a similar issue in LR.

in that thread it was claimed to have issues due to the lower res of the embedded jpeg. I was commenting on a thread in another forum where it seems this introduced issues where the embedded jpeg was different to how the image rendered when converted.

As to whether it was OK to check embedded, it depends - your previews may not be as good if you do this - however if it's not causing CPU issues you would miss out on this potential benefit but not really gain any CPU use back in return for that loss of quality.
