Shooting jpegs

I only shoot RAW, so here’s a question born of ignorance, with a little back story.
My wife is really getting in to iNaturalist. She’s been using one of my DSLRs. She’s not interested in optimizing, other than cropping, and she doesn’t want me to do so. So, if I set up a Canon DSLR to shoot RAW (just in case,) + jpeg, will the jpeg in-camera processing automatically apply sharpening? She’s not sharpening at all, but my concern is that when she crops hugely, then resizes, it will mess up the sharpening if the camera has applied it.
