would the new Sigma Art 135 be a good lens to get for panos?

Certainly, although you might find it a bit long for many single row panos.

No tripod collar available for that lens, maybe something to consider.
Single row pianos can become more simplistic using a lens with a tripod collar because the collar can hold the camera both vertically and centered on the rail...so all you need is a rail (to learn the nodal point), a foot (to attach the collar to the rail), and a bubble level to know that the “swing” maintains levelness throughout the shot. One of many ways to shoot pianos.
